Snake gourd & roasted bengal gram bhaji - Anuradha Prabhu
Recipe:
Scrape half a kilo of snake gourd, remove the seeds & chop into small pieces. Sprinkle a little salt, mix well & keep aside for half an hour. Crush 3 dry red chillies coarsely. Powder 1 tbsp of baked grams coarsely. Heat 1tbsp of oil in a karahi, add 1/2 tsp of mustard, 1/4tsp of asafetida 3-4 curry leaves & the crushed red chillies. Squeeze the water from the snakegourd & add to the karahi, add 1/2 tsp turmeric pd & salt to taste. Stir, cover & cook on a low flame till the snake gourd is tender. Add the powdered grams, 1tbsp grated coconut, 1/4 cup of chopped coriander. Squeeze the juice of a lemon & serve hot with rice or chappatis. Note:- no water is added while cooking.
