Pan Polo(Neer Dosa) - Nisha Baliga Shenoy
Ingredients:
2 cups Dosa Rice
1/2 cup grated coconut
salt to taste
oil to roast.
Soak the rice for about 2-3 hours in water.
Grind the rice along with grated coconut to a very fine paste.
Add enuf water to make this batter to a watery batter.Add salt to taste. This batter needs to no fermentation.
Heat a tawa . apply oil . take a ladle full of batter. and just spread the batter. close lid.
this dosa is fried only on one side.
To spread it thinly on tawa, this needs much practice.
Now a days many variations r added to Panpolo such as Palak puree , grated caroots or Boiled Avarekalu is added for taste and to give a colourful look and make kids have their dose of daily veggies .Beetroot is added to give a Pinkish look. Just add grated Beetroot to the batter at the last round of the grind.
Watermelon pieces can be added also.
Grated cucumber can also be added.
