Nucchi Phanna


Nucchi Phanna - Nisha Baliga Shenoy

Ingredients:

Broken Rice - 1/2 cup
Grated coconut - 1/4 cup

For Seasoning -

Mustard seeds - 1/2 teaspoon
Curry leaves - 2-4
Fenugreek seeds (Methi) - 1/4 teaspoon
Urad Dal - 1/2 teaspoon
Coconut oil or ghee
Green Chilli (split) - 2
Warm/ Hot water
Salt

Method:

In a deep pan, heat oil, once the oil is hot, temper with a seasoning of mustard seeds and curry leaves. Add split urad dal, green chilli . Saute on low flame. Add rice (pre-washed and rinsed) now and double the quantity of warm/ hot water [rice:water - 1: 1 and 1/2 proportion]. Add enough salt. Mix gently and bring to boil. Simmer on low flame for 20-25 minutes or till the rice gets cooked completely. Turn off flame and garnish with fresh coconut.
