Ragda Pattice - Suman Bhat
Recipe for Ragda :
Soak 1 cup green pulse peas over night Next day pressure cook for 20 mins and keep to cool
For masala -
2 onions
ginger galric green chilles paste 2-3 tsp
chilli 1 tsp
haldi 1/2 tsp
dhaniya 2 tsp
1tsp jeera
2tbsp oil
corriander leaves and garamasala 1/4 tsp to garnish
Take oil in kadai fry onions and gringer garlic and green chillie paste till light brown and nicely cooked...then put all tghe spice powders ry for a while more then pour the cooked ragda into this .and gasrnish with corriander leaves and garam masala and keep aside.
For Pattice :Cook 4 medium potatoes pressure cooked
5-6slices bread crumbs more if the potato is sticky variety
salt and 1/2 tsp haldi for light yellow color
Mix all this well and make pattice ( The potato should be able to come to nice neat rounds not wet nor sticky....add enough bread crumbs to get this dry dough) U can coat with rice flour/ corn flour too and then deep fry till golden brown
For sweet dates chutney :
1cup dates cooked and deseeded
1 lemon ball of tamarind cook along with the dates
1tsp jeera
1/2 tsp dhaniya
Put all this in mixer and make nice thick paste .
I didnt make any tikka chutney but u can with pudina green chilles and corriander.I normally make the gravy spicy so a small short cut here.
Some additional chopped onions ,corriander leaves and ready made nylon or thicker sev for assembling will be required .
To assemble-Put two pattice in a plate pour the ragda to cover it.Some sweet + tikka if u have made that chutney then... cubed onions and sev and fresh chopped corriander leaves and enjoy chatting and chat together.
