Prawns Biriyani


Prawns Biriyani - Laxmi Bhandary

Ingredients: 

Basumathi rice 1/2 kg, prawns 250 gms (sheleed and cleaned), mint leaves 1/4 cup, coriander leaves 1/4 cup, oil 1/2 cup, ghee 3 tbsps, cinnamon 2 pieces, cloves 4, whole cardamom 4, bay leaf 2, curds 1/2 cup, potato 2 ( cubed), lemon juice 1 tbsp, salt to taste
Ground follwing to paste: Cashew nuts 25 grams, onion 1, green chillies 6-7, turmeric powder 1 tsp, ginger garlic paste 2 tsps, salt

Method: 

Apply ground paste on prawns, set aside for 30 minutes. Heat oil in a thick kadai, add bay leaves, cinnamon, cloves, cardamom, stir fry, add marinated prawns, potato cubes, mint and coriander leaves, curds and salt. Cook for a while.Add the rice fry for a while, add hot water, cook for 15 to 20 minutes or till the rice is tender. Pour ghee, lemon juice, mix lightly. Serve with raitas.
