Karatya Tamboli - Rajashree Acharya Kamat
Recipe:
Scrape out the outer skin of the karelas. Cut them vertically into half,remove the seeds & cut them into very small pieces ( Kocchol karche ). Apply salt to these pieces & keep aside for 10 min. Afterwards, squeeze out the salty water from these pieces & keep them aside. Heat 2-3 tsp oil in a pan & fry these pieces on a low flame, taking care not to over fry them. Masala- for about a cup of grated coconut, fry 2-3 green chillies & li'l hing in li'l oil. Grind grated coconut + chillies + hing + tamarind into a fine paste. Add the reqd. amt. of water to make it into flowing consistecy & add salt. Mix properly & add the fried karela pieces. Give a final stir.
