Kalmi Kababs - Nisha Baliga Shenoy
1 kg Kalmi ( chicken leg pieces ) 10 to 12 pieces 1st marination
juice of half lemon
1/2 tsp salt
1/2 chilli pd
2nd Marination
1cup hung curds
1 tsp ginger garlic chilly paste
1/2 tsp haldi pd
1/2 tsp corainder pd
1/4 tsp jeera pd
1 tsp Tandoori masala pd
1/4 tsp chat masala pd
1/4 tsp garam masala pd
1/4 tsp pepper pd
pinch yellow food grade pd ( optional )
1 tsp kasuri meeti pd roasted and powdered
1 tbsp roasted besan
1tbsp cashewnut pwd
1 tbsp cream
salt to taste
HOW TO PROCEED
Wash the kalmi and pat dry with kitchen towel.
Put slits on it.
Marinate it with first marination for about 20 minutes.
Again marinate it in the 2nd marination for about 2 to 3 hours.
I have cooked it in a non stick grill pan.
U can cook as ur convience as in oven, griller.
While in Non stick pan , grease the pan with oil and place the kalmi and roast on all sides.
in between add drops of oils.
Serve hot.!
