Shahi Matar Paneer - Rethish G Prabhu
Ingredients :
Paneer , Green peas , onion , tomato , ginger , garlic , green chillies , coriander leaves , kasoori methi , cashew , grated coconut , fresh cream, 1 bay leaf.
Dry masala : haldi , mirchi ( kashmiri + normal ), dhaniya , jeera , kitchen king.
Method :
1. Boil a bowl of water by adding some salt .... remove from flame n add paneer cubes in it.
2. Cook green peas seperately.
3. Soak handful of cashew in hot water n grind to a fine paste by adding little water.
4. Heat oil in a kadai .... add jeera ..... then add ginger garlic n green chillies ( roughly chopped... don't chop finely as we will grind them ) .... then add roughly chopped onion .... fry till translucent .... then add kasoori methi .... then add tomatoes .... saute further .... add 3 tsp grated coconut... ( coconut quantity shd not more) ... then add chopped coriander leaves .... stir fry ... remove from flame ... cool n grind to a very fine paste without adding water.
5. Heat oil / ghee in a kadai ... add jeera ... then add a bay leaf ... then add the fine paste .... fry for some time .... add all dry powders and little salt... fry till oil seperates .. then add boiled green peas n water to attain reqd consistency to curry .... once it boils add paneer cubes n cashew paste .... check salt n curry consistency ... if too thick , then add some water. Remove from flame n add chopped coriander leaves n fresh cream ... mix n keep covered so that aroma don't escape. Serve hot.
