Ghosalya (Ridge Gourd) Bharta

Ghosalya (Ridge Gourd) Bharta - Rajashree Acharya Kamat

Remove the ridges of the ridge gourd & cut it into 2 inch pieces. Taste to check whether it is bitter. Discard the gourd that is bitteer in taste. In a pan, heat water & put all the pieces in it. Cover the pan & let the gourd get cooked. Meanwhile, in a small container, heat 2 tsp oil. Add 1-2 green chillies & li'l hing to it. Upon spluttering, remove from heat. Take abt 2 tblsp grated coconut, add the chillies & hing & tamarind. Add li'l water & grind this into a coarse paste. Add the cooked & cooled gourd pieces & grind this into a fine chutney. Add salt & also a tempering of mustard seeds & curry leaves.
