Egg Sukha


Egg Sukha  -  Nutan Shenoy-Kini

Recipe:

1. Eggs – 6 ( boiled & cubed ).
2. Onions – 6 ( chopped ).
3. Green chillies -8 ( chopped finely ).
4. Turmeric powder – 1/2 tsp.
5. Salt as per taste.
6. Oil – 2 tbsp.
7. Coriander leaves – 1/2 cup ( chopped finely for garnishing ).

Method :-

1. In a heavy bottomed degchi, add oil, add green chillies.

2. When the chillies change its colour, add chopped onions, saute till light brownish in colour.

3. Add turmeric powder, salt.

4. Mix in the cubed boiled eggs. Stir well.

5. Garnish with coriander leaves.

6. Goes well with chilled beer/ wine.

7. Serve with roti/ naan.
