Ceylonese Brinjal

Ceylonese Brinjal - Laxmi Bhandary

Ingredients:
 
1 medium brinjal, cut in to small pieces, 2 potatoes,cut in to small pieces, 3 big chopped onions, 2 kumta chillies, i teaspoon mustard seeds, few curry leaves, 2 teaspoon corriander powder, 2 teaspoon chilly powder, 1 teaspoon haldi powder, 1teaspoon garam masala powder, 1 teaspoon kitchen king powerd 1 & half cup coconut milk & corriander leaves
Method: Apply salt to brinjal & potatoes keep it for 10 minutes & fry separately & keep aside. Heat oil in a pan (refined pan). Add mustard seeds, curry leaves & kumta chillies. Fry for 1 minute. Add onions, fry for 5 minutes. When the onions are transperent, add all the powders & fry for 2 minutes. Then add coconut milk & bring in to boil. Then add fried brinjal & potatoes & salt. Garnish with coriander leaves.
