Bharleli Vaangi(Stuffed Brinjal)

Bharleli Vaangi(stuffed Brinjals) - Nutan Shenoy-Kini


Ingredients :-
1 kg. small brinjals.
For stuffing masala :-
2 cups dry coconut ( kopra ) roasted.
2 tbsp. chillie powder.
4 tbsp. kala – masala ( Recipe for kala masala given in chicken khandeshi ).
1/2 cup peanut powder ( roasted ).
1 cup coriander leaves ( chopped ).
2 tbsp. tamarind paste.
1 small lemon size ball of jaggery.
Salt to taste.
For seasoning :-
2 tsp. musterd seeds.
2 tsp. cumin seeds.
1 tsp. asafoetida.
1 tsp. fenurgreek seeds ( methi ).
1 tsp. turmeric powder.
5-6 tsp. oil.
Method :-
1. Slit the brinjals into four, without removing the stem.
2. Put them in water. Keep aside.
3. Grind to a paste all the ingredients meant for stuffing masala.
4. Stuff the brinjals with this masala. Keep the surplus aside.
5. Heat oil in a frying pan. Add mustard, cumin seeds. When they are about to splutter add asafoetida and fenurgreek seeds.
6. Add turmeric, salt and brinjals, cover & cook for 5 mins.
7. Add rest of the masala, little water and cook covered till the brinjals are done.
8. Stir, garnish with coriander leaves & serve hot with rotis, dal, rice, and raita.
