Badam Kheer - Namita Tickare
What do we need:-
100 gms Almonds (badam)
1 Liter Milk
100 gms Sugar / as per your liking
A few strands of Saffron (kesar)
A small pinch of Saffron colour (optional)
How do we do it:-
1 Soak the saffron in little cold milk and keep aside.
2 Soak Almonds in warm water for 1 hour.
3 After 1 hour peel the skin of the almonds.
4 Grind them to a fine paste in a mixer grinder with 100 ml milk instead of water.
5 Measure the amount of almond paste and keep the same amount of sugar aside.
6 In a deep vessel cook the almond paste for 10-15 minutes while stirring it constantly so that it does not burn.
7 Cook it till its aromatic.
8 Now add the sugar and keep stirring.
9 Add the remaining milk and boil for 10-15 minutes or till the milk reduces and the kheer thickens.
10 Add the soaked saffron and milk. Mix nicely.
11 Chill and serve garnished with saffron strands.
