Aloor Torkari


Aloor Torkari  -  Tanushree Aich

(Potato sabzi)

Ingredients
2 tbsp Oil
4-5 potatoes peeled & cubed
1tsp Nigella seeds
3-4 green chillies slit
2 medium sized tomatoes chopped
Chopped coriander leaves for garnish
Salt to taste

Procedure

In a wok heat oil
Add nigella seeds n slit green chillies
After a minute add the cubed potatoes
Let them cook till the potatoes get lightly fried
Add about 2-3 cups of water & salt
Let the potatoes cook well with the lid on
When the potatoes are almost done, add in the chopped tomatoes
Cook till the tomatoes dissolve fully only leaving the shrinked skin behind
Garnish with coriander

This curry goes best with puris & parathas!

PS : Add in the tomatoes only after the potatoes r almost cooked...else thy will later longer.
Nigella seeds dont splutter like mustard...a mins cooking is enough.
