Aam Ki Launji/Raw Mango Relish - Preeti Mukesh Rao
Recipe2 raw mangoes peel and cut lengthwise
Sugar - weigh the mango after cutting it. Use equal amount of sugar or less
Oil- 2 tsp
Mustard seeds-2 tsp
Fenugreek seeds- 1 tsp
Fennel seeds- 1 tsp
Turmeric pdr- 1/2 tsp
Salt- 1/2 tsp
Chilli powder- 1 tsp
Cardamom pdr- a pinch (optional)
Heat oil in a kadai. Add the mustard, fenugreek and fennel seeds. When they begin to change colour and the mango, turmeric and salt and cover and cook till mangoes become soft. Do not add water. Add sugar, chilli pdr and cook till sugar melts and the gravy becomes thick. Add cardamom pdr(optional). Allow to cool and store in a jar
