Ingredients
Brinjals-12-14
Coriander seeds-2 tablespoons
Cumin seeds-1 tablespoon
Clove-6-8
Green cardamom-4-5
Black peppercorns-15-20
Turmeric powder-1 teaspoon
Onion finely chopped-3
Oil-2-3 tablespoons
Ginger paste-1 tablespoons
Garlic paste-1 tablespoon
Red chilli powder-1 teaspoon
Garam masala powder-1 teaspoon
Salt to taste
Green chilli broken-2
Fresh coriander leaves finely chopped-1 tablespoon
Method
Step 1-Roast coriander seeds, cumin seeds, cloves, green cardamoms, black peppercorns in a non-stick pan.
Step 2-Cool and coarsely grind. Slit the brinjals and soak them in water with ½ tsp turmeric powder.
Step 3-Slice the onions. Heat oil in a non-stick kadai, add onions and sauté till golden brown. Add ginger paste, garlic paste and sauté till fragrant.
Step 4-Add red chilli powder, remaining turmeric powder, ½ tsp garam masala powder, salt and mix well.
Step 5-Add brinjals, green chillies and mix. Add a little water and mix. Cover and cook till brinjals are done.
Step 6-Add the ground masala, remaining garam masala powder, coriander leaves and mix well. Serve hot.
