Soda Scone with Herbs - Asha Pai
Ingredients:
1 1/2 cups maida
1 1/2 cups whole wheat flour
2 tablespoons sugar powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups (more or less) buttermilk
1 tsp ginger finely chopped
t tsp green chilles finely chopped
a few curry leaves finely chopped
a handful of green coriander chopped
a tsp each of mint and dill leaves finely chopped (optional)
Method:
Preheat oven to 200 degrees C. In a large bowl, whisk together the flours, sugar, baking soda, and salt along with the herbs and ginger. Make a well in the center, now add most of the buttermilk and roughly mix (adding more buttermilk if necessary) until you have a soft moist sticky dough. mix only till the dough comes together. Transfer to a lightly floured surface and gently knead (do not knead it like chapati dough or it will not rise )and pat the dough with your hands (again gently) into a thick round roti about 1 inch (2.5 cm) thick. now with a sharp knife cut these into 8 wedges. You can also pat the dough into a rectangular log and then cut it into half and then proceed to cut them into smaller triangles. spread on a baking tray and brush the tops with buttermilk. Bake in preheated oven at 200C for 18 to 20 minutes. The scones should have air pockets between the 2 layers after baking.
