Potato Bhaji


Potato Bhaji - Laxmi Bhandary 


Ingredients: 

5 potatoes, 5 green chillies, 4 onions,i tsp mustard seeds, 1 tsp cumin seeds, small ginger chopped, half tsp turmeric powder.2 tbsps oil, few curry leaves, salt to taste & few coriander leaves (optional)

Method; 


Boil potato. Peel & cut in to small cubes, Cut onion in to longish thin pieces. Chop green Chillies.Prepare seasoning in a pan with cumin, mustard, chopped green chillies and curry leaves in oil. Add onion & stir for a while.When onions are turn in to transparent add potato pieces and salt.Stir for a while.Sprinkle a little water all over.Cook under cover for 5 minutes.Remove from flame.Garnish with coriander leaves.
