Phirni

Phirni - Laxmi Bhandary
Recipe : 

1/2 cup basmathi rice, 1 litre full fat milk, 10 -12 saffron strands , 1/2 cup sugar (or as per ur taste ), 10 pistas, 10 cashews....Method : Clean , wash & soak rice in water for 30 minutes...then strain & grind to a thick coarse paste using little milk.... Heat remaining milk in a heavy bottom pan, once the milk comes to boil....put the rice paste in it...& cook on low flame till the mixture comes to boil again...or till phirni becomes thick & rice gets cooked well....keep stirring all the time to avoid burning...add sugar, cashews & pistas & mix...cook phirni till sugar dissolves completely...Phirni is ready... add saffron strands & elaichi pdr...& Again Mix well.....
