Kolambi(Prawns)Baath - Nisha Baliga Shenoy
2 cups rice
500 gms prawns deshelled and deviened
Ingredients for Prawns marinade
a) 1/2 tsp turmeric pd
b) 1/2 tsp salt
c)1/2 tsp ginger garlic paste
d)1/2 tsp Kashmiri lal mirch pd
e)1 tsp juice of lemon
1 tbsp whole garam masala like cloves , bay leaves, pepper cinnamon etc
2 medium onions chopped
3 tomatoes chopped
2 tsp ginger garlic paste chopped
1 tsp Kashmiri chilli pd
1/2 tsp Turmeric pd
1/2 tsp dhania pd
1/2 tsp jeera pd
2 green chillies slit
1 tsp Malvani masala
salt to taste
chopped coriander
Coconut milk accordingly.
METHOD.
Marinate the prawns with the above ingredients for one hour.
Wash and soak the rice for 20 minutes and drain it.
Heat oil in a thick bottom vessel or cookker body. Add the whole garam masala.
Add the onions and fry and ginger garlic paste and fry till raw smell disappers.
Add the tomatoes and salt. and all the dry spice pds. fry well.
Now add the prawns marinate and mix well for two minutes.
Add the drained rice and mix well with masala.
Now measure the coconut milk acco to the ratio of rice and add to the rice. add salt to taste.
Cook on medium flame till done or if in cooker ..cook for a whistle and sim for 5 minutes and turn off flame.
Let the vessel rest for 10 minutes.
Serve hot with Raitha. Yummz
How to make Malvani masala
TO MAKE MALVANI MASALA
2tsp coriander seeds
1 tsp cumin seeds
5 red chillies
1/2 tspp pepper
4 cloves
1 black cardamom
1 star anise
1 mace
1 piece dagad phool( stone flower )
1. Heat oil in a pan and fry all the above items one by one .
2. when cool pd it along with 1/4 tsp haldi pd, 1/2 tsp nutmeg pd and 1/2 tsp paprika pd. Mix well and Malvani
masala is ready.( add salt to taste )
