Eggless Microwave Cake - Anita Kamath Pai
(Adapted from Mitas kitchen)Recipe:
1/2 cup water (hot) to this add 3/4 cup chopped nuts, tutti fruiti , dates, n soak for 10 mins, to this add a mix of half cup sugar , 1/4 cup date syrup/molasses /maple syrup/honey (any one), and 1/4 cup oil. Mix well . Seive 11/4 cup cake flour(self rising flour as I used or 11/4 cup wheat flour with half teaspoon of baking soda) and 3 tea spoons of coco pow. Add the wet mix to this slowly stirring in one direction . Greece n dust micro wave safe bowl n fill only half way . Micro wave on full power for 7-8mins . If ur dividing the batter in 2 bowls micro about 3-4 mins. Remove once the toothpick comes out clean . Let it cool for 5-10 mins , loosen the edges n the carefully unmould.
