Cucumber Idli

Cucumber Idli - Laxmi Bhandary


Ingredients:
Tender cucumber ( medium size), 1, raw rice 1 cup ( or 1 pav), coconut gratings 1/2 cup, jaggery 1 ball ( according to ur taste), and salt to taste.

Method: 
Skin cucumber, Wash, grate and keep aside. Soak rice in water for an hour. Grind coconut gratings with rice to a fine paste. Squeeze out water from the cucumber gratings. Mix cucumber gratings with batter. Add crushed jaggery to the batter. Add salt. Grease idli cups and fill them batter and steam it for 15 to 20 minutes. Remove when it is cool. Serve with ghee or butter.
