Chicken Adobo

Chicken Adobo - Poornima Shenoy
Ingredients :

500g chicken boneless pieces
2 tsp vinegar
3 tsp soy sauce
1 cups water
5-6 cloves of garlic sliced
1 bay leaf
1 teaspoon whole / crushed black peppercorns
2 tsp cornflour

Method:

Place the chicken into a large casserole dish and add vinegar, soy, water, garlic, bay leaf and pepper. Add extra soy and water if needed.

Bring to the boil over high heat, reduce heat to medium and cook 30 minutes or until chicken is tender. Combine the cornflour with enough water to make a paste and stirring continuously mix into the sauce to thicken if required.
