Carrot Halwa - Shruthi Pai
Ingredients
Fresh Carrots – shredded 4 cups
Milk – 3 cups
Sugar – 1 cup
Ghee– 8 tbsp
Almonds – 10 chopped
Pistachios - 5 chopped
Method
Wash peel and grate the carrots . Then heat 4tbsp ghee in a wide pan . Add the carrots and cook till the carrot turns pale and you get sweet smell from carrots. Then add milk just enough to cover the carrots. Boil milk till the carrot is completely cooked and the carrot absorbs milk completely. It will take around 5-6 min. Then add sugar. And boil till you get thick consistency.
In a small pan roast the almonds and pistachios with 1 tbsp ghee. Then add the roasted almonds and pistachios to the halwa also add the remaining ghee. Fry for 2more minutes. Switch off the flame. Your carrot halwa is ready.
Please Note : You can add any dry fruits to the halwa. I used almonds & pistachios. Also powdered cardamom can be added.
