EGGS IN COCONUT MILK GRAVY - Vidya Nayak Shenoy

Ingredients -
Chicken - 1 kg. Whole spices - cinnamon - 1" stick cardamoms - 2 cloves - 2 Onion - 1 medium finely chopped. 1 tbsp. - ginger garlic paste 2 tbsp. - chilli pwd 1 tbsp. - coriander pwd 1/2 tsp - turmeric pwd coriander leaves - handful tomatoes - 2 medium finely chopped Thick coconut milk - 2 cups Thin coconut milk - 3 cups salt to taste.
Heat 3 tbsp. oil in a kadai and add the whole spices. Fry for a minute and add chopped onions, fry till translucent and add ginger garlic paste, turmeric, chilli and coriander pwds and fry for 2 minutes. Then add the chopped tomatoes and coriander leaves and fry till it leaves the oil at the sides. Add thin coconut milk, salt and chicken, bring to a boil and simmer till chicken is cooked. Then add thick coconut milk and simmer for 3 minutes. Garnish with coriander leaves The changes made by me r.. I've also added green chillies n one small onion while grinding and I've not extracted the coconut milk but ground the coconut to a fine paste...
