CAPSICUM VARITIES - Vidya Nayak Shenoy

CAPSICUM RICE

Prepare rice n let it cool add salt to it, Now fry 2 onions finely chopped in ghee, add slit green chillies , cloves, cardamoms, cinnamon, cashews , n raisins n fry for a while add finely chopped capsicum, n cook till tender but let the crispiness be there, mix the cooled rice n fry again finely garnish with coriander leaves....



CAPSICUM STIR FRY
Chop onions, tomatoes n capsicums in big chunks...Heat oil.. n fry onions for a while add tomatoes.. now add kitchen king masala.. red chilli pd., turmeric pd..salt n a pinch of sugar.. add capsicum n fry do not add water.. let the crispiness be there.. lastly garnish with grated cheese...



CAPSICUM N GOBHI SABZI
Method : Fry onions in oil and then add tomatoes and ginger garlic, haldi powder, chilly powder and garam masala, and then add some shimla mirchi...and coriander leaves, now add gobhi n fry for a while add salt n simmer, cook till done

Chopped capsicum into small bits.sauted well in oil(add salt to taste) ,should be crisp,don't over cook it.Then in a little thick slightly sour curds add 1 table spoon of coconut scrapings which is optional.Add the cooked capsicum in the curd and season with mustard,jeera,dried red chillies or green chillies,hing,curry leaves..
