1 cup of raw jackfruit pieces
1 cup of tender green mango pieces
1/4 cup of dry coriander seeds
1/4 cup of mustard seeds
1/2 tsp fenugreek seeds
1 tsp of asafoetida pd
20-25 red bedgi chillies
8-10 dry red chilli(spicy variety)
Salt to taste( 1/2 cup)
Steam cook raw jackfruit pieces, it should be slightly firm & not mushy, let it cool.Apply a little salt to the green mango pieces & keep aside. Dry roast each of the spices & chillies till light brown( it has to be done on a slow fire). Grind the spices & chillies with salt coarsely. Add very little boiled water if required. Mix it with the jackfruit & green mango pieces. Store in a sterilised bottle. This pickle is seasonal & the shelf life is maximum 1 week ,if refrigerated.
