Watermelon rind Chinese Style Stir Fry - Sabitha Shenoy
Recipe:
Cut into strips watermelon rind, carrot, spring onion, ginger, cabbage and sprouts( I did not have).mix 1/2 tbsp honey, 1 tbsp dark soy sauce, 2 tsp vinegar or rice wine. Mix 1tsp corn flour in water and keep it aside. Add salt to watermelon rind strips and keep it for 10 minutes. Squeeze out the extra water and spread on paper towel. In sesame seed oil add ginger, toss, carrots, watermelon rind, spring onion, cabbage and sprouts on high flame.Mix well add the sauce. Mix well. Switch off the fire. Add corn flour mixture. Switch on the fire, add pepper powder and check salt. Toss and mix until done. Serve hot.
