Stuffed Capsicum

Stuffed Capsicum - Laxmi Bhandary

Ingredients: 

Capsicum7 - 8 ( medium size), potatoes 3, green chillies 3, onion 1, ginger 1 inch piece, cottage cheese, 200 gms, cashew nuts 10 - 12, raisins few, dry mango powder, 2 tsps, red chilli powder 1tsp, cumin powder 1 tsp, garam masala powder 1tsp, oil 2 tbsps, cheese grated half cup, salt to taste, few coriander leaves.

Method: Wash capsicums, slice off thinly from the top and make it hollow. Similarly slice off thinly from the bottom so that capsicum stand steady when placed on a baking tray. Wash, boil, cool, peel and mash potatoes. Chop green chillies, onion and ginger. Grate paneer. Grind cashewnuts coarsely. Mix well potatoes, paneer, cashew nuts, raisins, dry mango powder, chilli powder, cumin powder, garam masala powder, coriander leaves and salt. Keep aside. Preheat oven to 225 degree C. Heat oil in a pan and add onion, cook till transparent. Add ginger and green chillies. Mix in potato mixture and continue to cook for 2 minutes. Divide this mixture evenly in to 8 portion and stuffed in to the prepared capsicum, sprinkle cheese and place on baking tray. Bake capsicum at 225 degree C for 15 minutes.Serve immediately.
