Kesar Phirini


Kesar Phirini - Anuradha Mudalagiri Kamath

(TARLA DALAL RECIPE)

Ingredients

5 cups full-fat milk (full cream)
4 tbsp long grained rice (basmati)
½ Tin milkmaid
1/2 tsp cardamom powder
a few chopped almonds
Few strands of saffron soaked in milk

Method

1. Combine the rice along with enough water in a bowl and soak for 1 hour.
2. Drain all the excess water and blend in a mixer to a coarse Powder and Keep aside.
3. Boil the milk in a broad bottom non-stick pan, add the rice powder and mix gently.
4. Cook on a slow flame for approx. 15 minutes, while stirring continuously and scraping the sides of the pan.
5. Add Milkmaid and cardamom powder and the saffron soaked in milk. Mix well and simmer for 5 to 7 minutes, while stirring continuously and scraping the sides of the pan.
6. Keep aside to cool slightly and refrigerate for atleast 1 hour.
7. Serve chilled garnished with almonds.
