Carrot And Apple Cup Cakes - Laxmi Bhandary
Ingredients: All purpose flour (maida) 2 cups, sugar 1 cup, canola oil (any other oil) 1 cup, eggs 2, grated carrot 1 cup, grated apple 1 cup, vanilla essence 1 tsp, baking soda 2 tsp, salt 1/2 tsp.
Method: Ina large bowl beat eggs, then add sugar and beat them well, so that it is creamy. Add oil, vanillla essence, grated carrot and apple and beat so that they are well combined. Add all purpose flour and beat well. Pre heat oven to 350 degree F. To the batter add baking powder and salt and mix well. Pour it in cup cake pan. You can add some nuts on the top. Place cup cake pan and bake for 20 minutes. Check by inserting a knife at the centre of the cake, if it comes clean it means cake is ready.
