Ash Gourd Halwa - Laxmi Bhandary
Ingredients:
1 ash gourd (medium size), sugar, 5 tbsps ghee, a pinch kesar (melted in 2 tsps milk ), 3 cardamom pods
Method: Grate ash gourd on a vegetable grater. Squeeze out water from the gratings and keep aside.Take sugar measuring equal to the gratings. Cook the gratings along with the squeezed out water, till water evaporates almost completely. Then add sugar. Turn over constantly till the blend becomes semi solid, almost forming lump. Add 4 tsps of ghee and mealted kesar. Turn over thoroughly, till sugar reappers on the sides of the vessel. Then add rest of d ghee, turn over till the blend becomes semi solid and gives off the absorbed ghee to the sides of the vessel. Add cardamom powder. Add cashew nuts and raisins fried.
