Khooba Roti(a thick roti - speciality of Rajasthan) - Kiranmayi kamath
Recipe
1 cup wheat flour, 2 tbsp ghee, salt to taste and water to knead the dough. Make a dough using all the above ingredients and keep it covered for about 30 minutes. roll out the roti(let it be thick, I have made it thin as I dont like thick rotis) and cook it on the griddle(it should not be very hot, but medium hot) on one side.Remove the roti from the griddle and pinch it all over and cook it on the griddle on both sides.Again cook the roti directly on the gas till it is cooked well on both sides.Transfer the cooked roti on a plate and smear it with ghee(I have not smeared lot of ghee but smeared very little) and enjoy with your choice curry or subzi.
