Soya Chunk Biryani

Soya Chunk Biryani - Vidya Pai
Ingredients:

Basmati rice or any rice-1cup

Cinnamon - 2 sticks , cloves - 2 ,cardamom-2, vinegar-1 tsp , ghee-1tbsp. Method:In a cooker pan add ghee,when hot add the above 3 masala items,when the smell comes add 2 cup water and vinegar.Allow the water to boil then add the washed rice and cook till 3 whistle or less according 2 the rice u have used in medium flame. For the Soya Masala:Baby Soyachunks boil in hot water with salt for 2 mnts,when cool squeeze and keep aside.Take little amount of soya chunks add chilly pwdr,turmeric pwdr,gingergarlic paste and sprinkle little rice flour on it and then deep fry. keep aside .
Also fry few onion chopped length wise in the same oil till brown,retain both the deep fried items for garnishing.

Now for the masala: Big onion 1 chopped lengthwise , ginger garlic paste 1tsp , g .chillies-2 ,tomatoes-2, chilli pwdr-1tsp , turmeric pwdr-1/2 tsp , coriander pwdr-2 tsp , garamasala pwdr-1tsp , coriander leaves-1 fist , mint leaves-1/2 fist, dahi-3 tsp, salt. Method: In a pan heat 2 tsp oil and add onions,fry till transparent,then add ginger garlic paste,saute further till the raw smell goes out, put g.chillys slit and tomatoes chopped finely,when the tomaotes are soft put chilly pwdr, turmeric pwdr , coriander pwdr and garmasala pwdr 1 by 1 and fry very well . Now add cilantro and mint leaves chopped finely and the dahi, saute well and add soya chunks and little water and salt . Remember that already u hv put salt in soya chunks while boiling .Close and cook for 2mnts and allow the water to dry. Final part, now open the cooker the rice wld hv cooked perfectly,on the rice add the soya masala and with the spatula just mix clockwise and anti clock wise each once so that the masala is coated partially.close cooker lid,and keep for exactly 5 mnts in simmer.remember donot put the weight of the cooker now . Then garnish with the fried onions and fried soyachunks and enjoy the dish.
