Stuffed Bitter Gourd - Rajashree Acharya Kamat
Recipe:
Take few karelas(Bitter Gourd), preferably smaller in size.
Remove its outer skin. Make a vertical cut in each of the karelas,taking care not to cut them in two. Then, with the help of a spoon/knife, carefully remove the entire inner mass along with the seeds.(This is easy when the karelas r tender.)
Boil water in a cooker or idli steamer.
Keep all the karelas in a vessel,cover it & steam them for 10-15 min.
In the meanwhile,prepare the stuffing.For this u will require grated coconut+ green chillies+ tamarind+ garlic+ salt+ coriander leaves.
Grind this into a chutney,adding li'l water. (I've just mentioned the ingre. of the chutney. Qty. can b decided acc. to taste.)
After steaming,remove the karelas,cool them & fill them with the chutney. Also tie a thread around them so that the filling does not come out.
Heat abt. 2-3 tblsp. oil in a pan. Add mustard seeds, cumin seeds & hing. Then add the stuffed karelas slowly & stir fry them.A delicious side dish is ready to be served.
