Rasmalai - Latha B Shenoy
Ingredients:
2 litres of Full cream Milk
1cup full sugar
2 cups water
dry fruits , pinch saffron
Juice of large lemon
2 litres full cream milk
1 cup sugar
Method:
Take the Full cream milk and bring it to bring and sim the flame.
Add juice of one lemon.
As the whey separates, hang the cheese in a cloth for half an hour.
Wash it in cold water to remove the smell of lemon juice.
again hang for half an hour.
Knead the cheese well. ur hands must be greasy .
Make small lemon size balls and just flatten it.
Pour water and sugar in pressure cooker. let the sugar dissolve well.Just slide the prepared cheese flatten balls.dont touch with hands.
Close the pressure cooker and just wait for pressure to form and after 5 minutes turn off gas.
immediately run the cooker under cold water and open it.
open the lid and let the cheese balls boil in sugar syrup for 10 minutes.
Now the cheese balls are almost double in size.
Let it cool down
Now boil 2 liters of milk and simmer it and let it reduce till half.
Add 1 cup of sugar or acc to taste.
add saffron soaked in warm milk.and dry fruits of ur choice.
Add the cooled cheese balls in the prepared milk .
Chill it.
Rasmalai is ready.
