Melting Moments

Melting Moments - Asha Pai
Ingredients: 
1& 1/2 cup of all purpose flour, 1/2 cup any good quality custard powder vanilla flavored (u heard it right !! alternately plain corn flour can be used (if using plain corn flour use 1 tsp vanilla to the dough) 1/4 teaspoon salt. sift these together twice. 1 cup unsalted butter, 1/4 cup sugar powder finely ground. 1/2 cup icing sugar for topping. 
Method:
Beat together butter and sugar powder till smooth & fluffy. add flour and prepare a soft dough. if it is sticky, chuck it in the fridge for an hour. remove make small balls of dough with just about a teaspoon and a half of the dough for each cookie. (you have to be able to put the whole cookie in the mouth to feel the melting moments) spread on a lightly oiled tray and bake at 350 F or 180C for 12 to 15 mts for a batch. time may vary so check the doneness after about 10 mts. if the base of the cookie starts turning brown remove them immediately. cool on a rack for 5 mts only, then remove and roll them in a tray of icing sugar. u may have to repeat the rolling in sugar process. make sure they are still warm when you are doing this. alternately you may sift sugar above the cookies. cool and store them in air tight.
