Carrot Pulav

Carrot Pulav - Laxmi Bhandary

Ingredients: 2 cups Basmathi rice, 1 cup grated carrot, 1 big onion, 3 cloves, 4 tbss ghee, 1 cinnamon piece, 1 garlic pod, 1 small ginger piece & salt.


Method Wash rice. Drain its water. Keep aside for 15 minutes. Grate carrots on a vegetable grater. Cut onion in to thin slices. Powder the cloves & cinnamon. Prepare ginger garlic paste. Heat ghee in a frying pan. Fry the cinnamon and cloves powder for a while. Add onion & fry till golden brown. Add ginger garlic paste & fry a little. Then add grated carrot & fry for 2 minutes. Lastly add rice, stir & fry for 5 minutes. Add 4 cups of boiling water & salt to taste. Cover the pan & cook on slow fire. Stir twice or thrice. When cooked remove from fire.
