Beetroot Cutlets

Beetroot Cutlets - Rajashree Acharya Kamat
Recipe

Boil 3-4 med. Beet & 2-3 Potatoes. Grate the boiled beet upon cooling & mash the potatoes. ( The grated Beet & mashed Potato must be nearly equal). Heat oil in a kadhai & fry 1 chopped onion in it. Then add red chilli powder, mix & add the grated beet. Fry for some time & then add the mashed potato, salt to taste, juice from 1/2 lemon & chopped coriander. Mix properly. If you like, also add 1 tsp Chaat Masala at this point. Cool the mixture. Make small cutlets & shallow fry them. Have them with sauce or chutney of your choice.
