Batata Poha

Batata Poha - Laxmi Bhandary

Ingredients: 2 pav beaten rice (thick), 2 potatoes (chopped and boiled), 2 tbsps cashew nuts bits, 2 onions (chopped), 1 tsp mustard seeds, 1 tsp black gram dal, 4 green chillies ( slit), few curry leaves, 2 tsp sugar, few coriander leaves and salt to taste.

Method: Wash beaten rice and soak in water for half an hour. Squeee out water. Mix sugar and salt and keep aside. Heat oil in a pan. Add mustard seeds. When it splutters, add black gram dal, cashew nuts bits, green chillies, curry leaves and onions. Stir. When onions are transparent, boiled potatoes. Stir for 1 minute. Then add beater rice. Turn over well. Cook on low flame, under cover for 5 minutes (open once or twice and turn over). Remove from flame. Garnish with coriander leaves.
