Agra Ka Peta

Agra Ka Peta - Anitha Shenoy


Ingredients:
Pumpkin-1kg
Sugar-1/2 kg +1cup 
Choona(white one used in pan for color)-2tbsp 
Water-1 1/2 ltrs+1/4 cup. 
Saffron(optional)-few 

Method:
peel and cut pumkin in medium sized cubes. Prick from fork to all the sides of the pieces. 
Take a wide vessel add enough water to soak the pumpkin pieces. 
To the water add choona and mix well. 
Add the pieces in choona water and allow to soak for 5hrs. 
Later remove from soaked water and place on a plate to dry for 3-4hrs. 
In a vessel take 1 1/2 ltrs of water for that add 1/2 kg sugar and allow it form a syrup of thin consistency. 
Add kesar/saffron to the syrup. To get the proper consistency cook in low flame.. 
Add the pumpkin pieces and cook till transparent. It will take around 20mns to get the transparent look. 
Remove the pieces and keep it aside. 
Take another bowl of 1/4 cup water and 1cup sugar to make crystal sugar. 
Keep stirring it you get the crystals... Add the pumkin pieces mix well till incorporated. Allow to cool under fan for 2-3days. You can either make plain white or can make colourful by adding different food colours. Here i have added saffron. This pic of mine was on day one. Enjoy cooking!!!
