Tropical Rice Pudding - Priya r Shenoy
Recipe:
Boil one litre of full fat milk and and then kept it on simmer for about 15 minutes to slightly reduce it.....original recipe calls for the addition of lemon grass and kafir lime leaves to infuse its flavour in this but since i didnt have both i omitted it...in the mean while soak 1/4th cup of small grained fragrant rice for an hour or so...then drain water and add it to the milk and further boil till the rice is well cooked and almost blends in with the milk...add about 6 to 7 table spoons of sugar and simmer for another 5min....when it is almost coming down to room temp then we had to add 3/4th cup of thick coconut milk....this is the tropical connection i guess..haha.....then fill it in individual containers and put it to chill in the fridge where it sets like soft phirni....decorate with tripical fuits.....can make a syrup with a little water and sugar, simmer it and then add the fruits to it and decorate or just add the fruits as i did....basically i missed out on the lemon grass and the kafir lime leaves...
and d changes i made was
i made some sugar syrup n sauted fresh strawberries n grapes in it n then added a drop of rose essence.
