Chilly Prawns

Chilly Prawns - Rajashree Acharya Kamat
Recipe: 

Take about 10-12 med. sized prawns. Peel & de-vein them. (I've used the smaller ones.Did'nt get the larger ones that time.) Add 1tblsp. Soya sauce+li'l salt+2tblsp. refined flour (Maida) to them & mix properly so that they get a uniform coating. Keep aside for 5min.Heat oil for deep frying.Meanwhile, chop 2-3 spring onions,keeping the bulbs & stalks seperate. Then deep fry the prawns,taking care not to burn them. In a wok, heat abt 2tblsp. oil.Add 4-5 finely chopped garlic cloves + 1inch finely chopped ginger& saute them.Addthe whites of the spring onions+1 capsicum (med.sized) cut into dices+2 finely chopped green chillies+ 1 tblsp. Soya sauce+ 2tblsp. red chilli sauce+fried prawns+ salt.Toss to mix properly.Add water to corn starch to make a fine paste. Add this paste to the wok & mix. Adjust consistency with water. Add 1 tblsp vinegar & the greens of the spring onions. Toss.Remove from fire & its ready to serve.
