Fruit Cake

Fruit cake - Viraja Bhandarkar Aruna Acharya

Egg-4
Maida-200gms
Butter-200gms
Sugar- 200gms
Baking powder -1 tsp
Salt-pinch
Masala powder[ nutmeg, dalchini] -1/2 tsp
Vanilla essence-1tsp
Tutti fruity,badam cashew,raisins -200gms
Caramel-2 tbsp
Instant coffee-1tsp


Method :
Clean , cut & put all tutti fruity & dry fruits in a bowl with masala powder & soak in juice of 1 lemon . this should b made previous night of baking the cake!

Cream butter, sugar.
Beat eggs with vanilla essence in separate bowl.
Add beaten egg to the creamed mixture little by little beating throughout.
Sieve flour, salt & BP thrice.
Mix fruits & flour together & keep aside. otherwise the fruits will sink down.
Add the flour & fruits mixture gradually to the creamed mixture & mix with plate knife.
Add caramel & coffee. Mix well. Put in prepared Tin & bake at 150 degree for1 hour
