Masala Appo


Masala Appo  -  Rama Kini

Recipe:

For the batter:1cup urad dal, 2cups raw rice. Soak separately for about 4 hours. Grind the urad dal to a Smooth batterGrind rice to slightly coarse batter. Mix both together and ferment overnight. In the morning, add salt to taste and mix well.

For the stuffing: Cut 1 onion finely. Cut veggies( carrot, potatoes) finely. Heat oil in a frying pan, add1/2 tsp mustard seed and 1/4 tsp jeera. After they splutter add the chopped onions and sauté for sometime. Now add the chopped veggies and some green peas. Add 1/2 tsp chilli powder,1/4th tsp turmeric powder.Stir well and add salt. Add a little water and cook the veggies with the lid on the pan till the veggies are cooked and dry. Add a pinch of amchoor powder and garam masala powder and mix well.
To make the appos..heat an Appo griddle with a little oil. Pour about1 tbsp of batter, put a tsp of the filling and top it with some more batter to cover the filling. Cover the griddle with a lid and cook on medium flame till the batter sets. Now flip the appos and cook further for a minute or two. Remove from the griddle and repeat with the remaining batter. Serve hot with any chutney of your choice.!
