Boondi Ladoos

Boondi Ladoos - Nisha Baliga Shenoy

Ingredients:
1 cup Besan
1/2 water plus a little more
1 cup sugar
1 cup water
1 tsp cardamom powder
some dry fruits
1 tbsp ghee


METHOD

Make sugar syrup of one thread consistency with 1 cup sugar and 1/2 cup water. Keep aside.
Make a batter with batter and water . check the consistency by passing it through the perforated ladle. The batter must just pass thru it.If not add few drops of water and mix well.
Now take a thick bottom pan. heat oil in it.make the flame medium.Hold the ladle just one inch over the pan and pour some batter over it. and now slowly tap the ladle on the pan. small bondis will fall in the oil. fry it till "ssshhh" sounds stops. it must not be too crispy.
Take it out and spread on a kitchen towel for a minute.and then transfer it into the hot sugar syrup.
Repeat the process tilll the batter is finished. (NOTE-Clean the ladle each time u pour the batter. )
Now all the Boondis r transferred in the hot syrup.
Add cardamom pd, ghee fried cashews and raisins.
add a tbsp of ghee. Mix well. while still warm make laddos.
While making laddos , apply ghee to ur palms n press it bit hard, otherwise the tails of boondis will be seen.
Yummy Boondi laddos r ready!
