Biscuit Roti

Biscuit Roti - Laxmi Bhandary

Ingredients: Maida 3 cups, sugar 1 tsp, hot oil 2 tbsps, salt 1 tsp, and oil for frying

For filling: bombay rava 3 tbsps, bengal gram flour 2 tbsps, bengal gram dal 3 tsps, coconut gratings 4 tbsps, chopped green chillies 2 tsps, chopped ginger 1 tsp, few curry leaves, hing (asafoetida) water 1 tsp, red chillies 2, mustard seeds 1 tsp, salt to taste.


Method: Prepare dough for puris by stirring half cup water and adding maida and hot oil. Knead well. Chop curry leaves, green chillies and ginger. Prepare blend of coconut gratings, chopped ingredients salt and hing water. Season with mustard, black gram dal, red chillies and curry leaves in oil. Mix bombay rava and bengal gram flour with it. Keep aside. Shape small portion of the dough in to balls & roll them in to puris. Place 1tsp of filling on each puri and cover it fully. Roll again in to puris. And deep fry in hot oil till golden brown & crisp
