Sabudana Idly

Sabudana Idly - Laxmi Bhandary

Ingredients: Idli rava 2 cups, Sabudana 1 cup, curds 2 cup, water 2 cups, chopped coriander leaves 2 tsps, baking powder 1/4 tsp and salt to taste


To season: Ghee or oil 1 tsp, mustard seeds 2 tsps, few curry leaves, cashew nut 12 to 15, chopped green chillies 3 to 4


Method: Take a large bowl, mix together idli rava, sabudana, curds and water. Add salt to taste and keep it outside overnight. Next morning, mix it well, add additional water if it has turned dry. Add grated coconut (2 tbsps) & mix well. Heat ghee or oil in a pan, splutter mustard seeds , add curry leaves, cashew nuts & green chillies. Season it to the batter, add baking powder, mix well. Grease idli mould & add a ladle of batter & steam it for 20 minutes. Serve hot with chutney.
