Matka Biryani - Ananya Ashwini Pai
Recipe:
Par boil the veg of your choice. i used carrot, beans,gobi, potato, mutter, tomato and paneer. then drain the water well. marinate the vegy with curds,ginger garlic g.chilly paste, garam masala, corinder powder, chilly powder, termaric powder, kasuri methi powder, salt as per taste, chopped corinder leaves,chopped pudina leaves,oil. mix well and rest this marinated vegy for around 2 to 3hours. soak the rice for 20 min and then in boiling water put the whole spices and then put the rice,salt. when its 3/4th cooked drain the water well and put some normal water on it. drain well and keep aside. now take a matka put around 3tbsp of ghee and then arrange the marinated mix vegy. put some fried onions and then arrange the rice which is 3/4th cooked. garnish with fried cashu and fried onions. now take some saffron in warm milk and kiwra water drops in that mix. pour this milk on the rice. add 2more spons of ghee over and then take any lid which sits right on the matka and seal it with maida dough. place this matka on the hot tawa and on low flame let it cook for 20 to 30 min. your dum matka biriyani is ready
