Red Hot Potatoes


Red Hot Potatoes - Laxmi Bhandary

 
Ingredients: 


Baby potatoes 1/4 kg, kashmiri red chilli powder 2 tsps, turmeric powder. 1/2 tsps, coriander powder1 tsps, cumin powder1 tsp, coriander leaves a few sprigs, oil 2 tsps, mustard seeds 1/2 tsp,salt to taste, tamarind pulp 2 tbsps.


Method: 


Wash baby potatoes well. Do not peel. Blend together kashmiri red chilli powder, turmeric powder, coriander powder, & cumin powder with 2 or 3 tbsps of water to make a smooth paste. Heat oil in a pan, add mustard seeds. When they crackle, add potatoes, salt to taste and half cup of water. Cover & cook till potatoes are half done. Stir in masala paste. Cover & cook till potatoes are completely cooked. Add coriander leaves & mix well. Add tamarind pulp & cook on low heat for 10 minutes. Serve hot with rice or chapathies.
